Spanish Rice

Spanish Rice Recipe


Prep time 5 minutes
Cook time 20 minutes


3 Tablespoons olive oil
1 onion, chopped fine
1 garlic, minced
1/4 cup green peppers, chopped fine
1 celery stalk, chopped fine
2 cups of long grain white rice
3 cups chicken or Vegetable stock
1 Tablespoon tomato paste
1 medium tomato, diced
pinch of cumin
1 teaspoon salt

In a large skillet brown rice in olive oil, medium heat. Add Onion and garlic
peppers and celery. Cook until vegetable are soft, stirring frequently, about
4 minutes.

In a sauce pan bring stock to a simmer. Add tomato sauce, chopped tomato’s.
cumin and salt. Add broth to rice. Let simmer with cover. Lower heat and cook
for 15-25 minutes. Turn off heat and let sit for 5 minutes.

Serves 4 to 6
