Farmers Market Frittata

Good Morning,

This past week I had the opportunity to enter one of my favorite recipes into a Breakfast Recipe Competition.
It was for Bed& I decided to enter one of my favorite recipes, Farmers Market Frittata.
The picture speaks for itself. The Frittata is made with all local fresh vegetables & eggs.

Farmers Market Frittata

The Farmers Market Frittata is really a fun dish to make. I like being able to use whatever vegetables you have in
your refrigerator. This is what I chose this week for my Frittata.



1 tsp olive oil
12 Eggs
1.2 Cup red pepper
1/2 Cup green pepper
1/2 Cup yellow pepper
1/2 Cup mushrooms
1/2 Cup onion
1/2 Cup asparagus
1/2 Cup broccoli
1/2 Cup zucchini
1/2 Cup tomato
1/2 Cup green onions
1/2 cup red potato
1/2 cup fresh spinach
1/3 Parmesan Cheese
1/3 Cheddar Cheese
1/2 tsp salt and pepper
2 chives
1 tsp sour cream


Heat oven to 350 degrees. Heat olive oil in a cast iron skillet on the stove. Add your chopped onions, cook for 10 minutes. Add spinach, cook for another 2 to 3 minutes.
Add the remaining vegetables and cook for another 10 minutes. Beat 12 eggs in a bowl with salt and pepper.. Add your cheddar cheese and whisk. Add your egg
mixture to your skillet. With your spatula gently lift sides and let eggs run underneath. When eggs are almost cooked on the stove, put your
skillet in the oven and bake the frittata. Remove from oven, slice your Frittata and put onto a plate with a dolip of sour cream in the middle and place
your two chives on top, and sprinkle some parmesan to finish the dish off. Serve warm

This recipe is delicious and easy to make.
