Hello friends,
I thought I would share a really easy recipe that is loaded with GREAT flavor. I have to say after enjoying
a few with my husband today, we decided I must blog about these tasty treats. Peaches are not in season
but I used a can I had in the pantry. You may use frozen peaches if your trying to stay away from can goods.
RECIPE Makes 12 muffins
Preheat oven to 350 degrees
2 cups of flour
1/3 cup sugar
1 egg
1/2 applesauce
1/2 cup vanilla Greek yogurt
1/2 tsp salt
1/2 tsp cinnamon
1 tsp baking soda
1 tsp vanilla extract
1 1/2 cups chopped peaches (canned or frozen)
Topping
1/2 cup coconut
1/3 brown sugar
1/2 cup peaches
Mix sugar, applesauce, yogurt, and eggs in a bowl. Mix until creamy. Add vanilla. Then add flour,
baking soda, cinnamon, and salt. Mix together, and fold in peaches. Spoon batter into muffin tin.
Remember to reserve 1/2 cup peaches for topping.
Mix together coconut, brown sugar, and diced peaches, sprinkle over the top of your batter.
Bake for 20 minutes.
I think these would be a great Easter Brunch idea,
or serve them warm for breakfast or snack.
