Cucumber, Tomato, Basil, chick peas with hummus Sandwiches
This week I thought I would share a healthy snack idea. These veggie sandwiches are great because you can customize them however you want. Today I used cucumbers, tomatoes, chickpeas. basil, hummus and sprinkled some sea salt and pepper on top.. Hummus comes in many different flavors but I think homemade is by far the best and most flavorful, but you can purchase any kind from you local market.
I don’t know about you but this inspires me to grow a big garden this spring. I think I will venture over to Al’s Garden Center this next week to get some seeds.
I have found it to be very important in washing all your vegetables before cutting into them.
Cut up your cucumbers into 1/3 of an inch leaving part of the the skin on. Cut even amounts to fit into sandwiches.
Layer with a slice of tomato, chickpeas, hummus, then basil. To finish them off sprinkle with some sea salt & pepper.
Hint.. I think these would be a great Superbowl snack to make or bring with you. They are easy to make and flavorful!! The taste won’t disappoint you.
